Rocket Flower import_2019_05_14_173407 citric acidThe Rocket Flower washed process begins with a 36 hour pre fermentation, followed by floating and disinfection using sea salt. It then undergoes anaerobic fermentation, and is pulped. Leachates are collected and used per fermentation tank with enzymes to create a floral profile, then fermented for 6 days. The beans are mechanically dried for 2 3 days at below 38 degrees. A 15 day stabilization period follows. This results in a flavor profile of
